'Bacon jam and rocket' burger recipe

This is a simple burger, with beef patties, cheese, a simple bacon jam, and rocket (arugula), but it'd have to be one of the most flavoursome burgers I've ever had. The ingredients go really well together.

The bacon jam (recipe from here)

Yields 2 cups, which is enough for quite a few burgers. Leftover bacon jam can be used in lots of ways.

Ingredients

  • sliced bacon, 450g (1 pound), cut into 1-inch pieces
    The original recipe said thick-sliced bacon, but it works fine with thin-sliced bacon. This sauce is chunky, but if you want a smoother sauce either chop the bacon into smaller pieces or pulse the finished jam it in your food processor to reach the desired consistency. I don't think it's worth the time or effort to do that.
  • yellow onion, 1 large, diced small
  • garlic, 2 cloves, peeled and smashed
  • balsamic vinegar, 1/3 cup
  • brown sugar, 1/3 cup packed

Cook the bacon
In a large frying pan over medium heat.
Stir occasionally, until the fat is rendered and the bacon is browned, but not burned or overly crispy. Scoop out the cooked bacon with a slotted spoon, and drain it on a paper towel-lined plate.
This should take around 15 minutes.

Cook the onions and garlic
Drain all but 2 tablespoons of fat from the pan.
Add all the bacon back to the pan.
Add the onion and garlic and cook until the onions are translucent, about 6 minutes.

Reduce the jam
Add the vinegar and brown sugar, and bring to a boil.
Cook stirring and scraping up browned bits from the skillet for 2 minutes.
Reduce the heat to medium low, and simmer uncovered, stirring occasionally, until the liquid turns syrupy and almost completely evaporates—this should take about 30 minutes.
 

The burger

Ingredients

  • Buns
    I prefer potato buns
  • Beef mince
  • Salt and pepper 
  • American cheese
  • Bacon jam
  • Rocket (arugula)

Cook the patties
I like to make large patties, each about 1/3 of a 500g pack of mince.
Brown the first side, and while it's cooking put salt and pepper on the top side.
Flip the patty, add salt and pepper on the top side, and after a couple of minutes add a slice of american cheese.
Rest the patty (like in a foil pocket, or in a covered bowl). Rest at least 3 minutes. While it's resting continue with the following steps.

Toast the buns
Cut side down, till lightly toasted.

Assemble the burgers
Put a patty on the bottom bun.
Add a generous amount of bacon jam. The bacon jam doesn't need to be hot. I basically put on as much as it will hold (after a certain point excess bacon jam will slide off the mound).
Add a generous amount of rocket. It compresses down a lot, so you want to put quite a bit on.
